Besides - we have a kitchen counter full of tomatoes, and someone's gotta eat 'em! ;-) The night before I'd made a huge batch of salsa, so that was definitely on the menu. Hm, what else.
Two ears of corn in the fridge leftover from the 1/2 dozen we picked up on the weekend - I'd have one of those (I'd love two, but have learned my digestive tract doesn't always appreciate a second ear of corn!) It's some mighty good, mighty sweet corn - so that would be good....
As I was driving home I was seriously considering stopping to pick up some fish at Giant Eagle, but the last time I walked by the fish section it didn't smell so hot, and I didn't feel like stopping on the way home. There IS bacon in the fridge however...and some lettuce...and some bread.
Mmmm - time for another BLT! This time I made it with two slices of an Aunt Ruby green tomatoe, and two slices of Black Krim. And just for fun, I mixed together some mayo with the extra-garlicky pesto I was also whipping up for the freezer (harvested A LOT of basil!) - garlic pesto mayo on a BLT? It's a good thing!
Extra bonuses for myself... Eating at the dining room table rather than sitting on the sofa with the tv on. Firing up the music stations on the digital cable - how about a little smooth jazz! CLOTH placemat and napkin (albeit a little wrinkly and missmatched!) ;-) A cherry coke! And some good reading - The $64 Tomato by William Alexander, which I just started last nite, am half way through, and am LOVING! Very entertaining - kept me up later than I meant to be, and had me laughing out loud (in bed! after Brett had gone to sleep!)So that was my nite last nite. Today was a little rougher after we discussed more of the "what might have happeneds" with the Notch situation, and tonite I didn't feel like cooking at all due to pure funk, so we went out for Chinese buffet.
Here's a close up of the sandwich before I closed it up (making it about 3 inches tall!) - you can even see some of the garlic pesto mayo in the upper right corner of the bread. Not sure why the pics are all turning out so funkily colored - it's like the camera just doesn't know what to do with all these shades of red in the tomatoes, plates, etc. Didn't spend too much Photoshop time with it - I'm off the clock.

Being single, I, too, have ME nights although, frankly, I'd rather have TOGETHER nights! :)
