Part of this year's holiday treats in the great baking frenzy was going to be biscotti. My intentions were to make FarmGirl's Chocolate Biscotti and a standard non-chocolate almond cranberry variety.
Time ran short. Tensions were high. Recipes were goofed. Etc. While I got plenty of stuff made, including the chocolate biscotti, I didn't make the other variety. Oh well - they'll be something good to make AFTER all the sweets of the holidays are gone - a more mature, less rot-your-teeth-out taste...
Don't get me wrong - I'm quite content with sharing (and snacking on!) the chocolate variety! I made two batches - one plain, and one that I split in two - half with sliced almonds and mini chocolate chips, and the other with sliced almonds, mini chocolate chips, and dried cranberries. Yum!
And then Peter's got me hooked on the idea of making non-chocolate ones with pistachios and cranberries - that's one of the treats from him that arrived in the mail yesterday. Wow, soooooo good!

Between your cookies and Peter's cookies, I wouldn't need to bake anything! Heck, who am I kidding...I didn't bake anything...except for the walnut/chocolate-chip/oatmeal cookies I had to bake for a cookie exchange.
Those chocolate biscotti look sinfully delicious :)
Do try some non-chocolate ones as well. I think I actually prefer biscotti without chocolate. I have a triple ginger recipe you might like.
They do like quite tasty, though.
Oh I did the non-chocolate last year (remember - that's what I had here when you were visiting for work!)....I just hadn't had time yet this Christmas to pull 'em off. Trust me, they're on the agenda! As are your pistachio ones! And ginger biscotti does sound good!
