We love the flat bread recipe from the King Arthur Flour cookbook - makes such good stuff with so few ingredients. This was the second time I made it, and each time I forgot to follow the instructions for adjusting the recipe if I didn't instant yeast. Not a problem! Only this batch DID turn out a little moister, which I compensated for by dusting with a little extra flour as I rolled out the flat breads, and that, in turn left the end product tasting a little dusty...but otherwise they were great!
Here's the dough balls on their final resting before getting rolled out and dry-fried...
The first flat bread just thrown on the griddle element on the new stove while broth, onions and garlic start to boil for the couscous...
Several flat breads later - showing the bubbles forming, and the accumulating extra flour...
Once I got confident, I was cooking two at a time! And the couscous looks about ready - I added a variety of freshly picked and snipped herbs to it. Yum!
Oh, and there was grilled pork tenderloin sliced thin, cut lettuce, and I'd grilled squash to have on top of my couscous.

Jeph, that looks stunning. Truly. I love the flat bread, and with the pork and fixings? YUM! I'm envious!
Holy crud that looks awesome! Like hugely awesome... Kelli was just complaining this weekend that you can't find "the stuff like you get in a good restaurant" in the store - but it looks like you make it... please post recipe with your learning's (is this it: http://www.kingarthurflour.com/shop/recipe.jsp?recipe_id=R287) - that's a gotta make - even if it tastes bad - because it looks so darn good!
