Pesto pronto!

As you'll see from some upcoming posts, it is time to start preserving food for winter. Seriously, we gotta stock up the larder, fill the freezers (oh wait, they're always full), batten down the hatches. Food and gas prices are going up! The apocalypse is near!!

So what does one do during the apocalypse? Why dine on pesto of course!

Here's my first batch of the year....the basil's really taken off, so I gave it a severe haircut...


...and threw it in the food processor with a bunch of parmesian and garlic I'd already whizzed. I got a good quart bag full of the stuff in the freezer now, plus a bit in the fridge (under a thin layer of olive oil to prevent browning) to have on pasta sometime this week. And HOPEFULLY the basil will make a comeback for at least one more mega harvest before we get a frost...
