We've recently had freezing cold weather alternating with really warm weather (into the 60s some days!), and days where it does nothing but rain, plus everyone around here has been sick, and I've made several trips to the doctor for sinus infections, achy/clicking ears, etc. Hm. Time for some comfort food if you ask me!
The first once was Brett's request - if there's anything Brett loves, it's soup! So we had chicken noodle soup, and he asked for the spiral noodles. The current brand of noodles I have are really packed with flavor - so much so that the green/spinach ones are almost distracting when in a soup like this! Still the soup turned out really good!
And then a few nights later I decided it was time to make some mac n cheese. I don't really use a recipe - I just finely shred some onions, saute those in butter and a little olive oil, add salt and pepper, and this time got a little adventurous and added chili powder along with the flour (that's why my roux looks a little off-color here). Then I added a bunch of cheese I shredded - sharp cheddar, Colby Jack, and Jarlsberg (which might've added a bit of sweetness?).
Once the pasta was cooked and all sauced up with cheesy goodness, I dumped it into a baking dish, and covered half with buttered crushed crackers (Brett doesn't like the cracker topping - what kinda fool is he?!)
Then it got tossed in a hot oven for a short while, just to brown the cracker top a little, and mmmm mmmm mmmm was this a good dinner! Paired with sliced apples and nothing else, and it was a nice, simple dinner.
Oh, you might notice I used both rigatoni AND ziti pasta for this batch...and some of them paired up to get it on. How naughty!
