Thanks dad!

I worked from home this past Friday, and it turned out to be a MOST excellent day to do so!! The weather has been warming up this week - it got up to 63 Friday, and up to 70 Saturday! VERY sunny! Sure, the occasional breeze is cold, but it's perfect for working outdoors, whether on the laptop, or in the dirt.

And since I was working from home, I got to whip up the kind of lunch that I wouldn't normally take with me to lunch. I had an avocado I'd picked up earlier in the week. There was some fresh mozzarella that needed to be used up. Carrots, cucumber and romaine? Check! And the star of the show!? The salmon dad smoked just before we got to NY this past weekend. I've been nibbling on it all week, and figured I should actually try to incorporate it into a meal.



So that's what Friday's lunch looked like. YUUUUM! If I'd still had some asparagus, I would've blanched those and added them as well. There's just a little bit of the smoked salmon left, so I figure I'll have that on crackers or, as I've done all week, just nibble at it plain.

Dad said he didn't do ANYTHING fancy with it. He just took the frozen chunks of salmon and put them in the smoker (he also had pork, beef brisket and beef eye of round going as well). No rub, no marinade, nothing - just three hours in the smoker, starting off frozen. MMMM good - thanks dad!

The salad looks amazing. I love avocado in salads. :)

Thanks! I had the last of the avocado in a similar salad Monday, only using chicken instead of the smoked salmon. Now I want to buy another avocado! ;-)
