Brett's off at a work dinner function tonite.
That means I get to cook seafood!!
Tonite's dinner - no real recipe, just sauteed some HUGE scallops and shrimp with garlic, lemon zest, and crushed red pepper. Dump in some wine leftover from the Halloween party, lemon juice and water, mix with linguine and sprinkle on some parsley and freshly grated parmesian.
YUM!

Jeph! Please! I need that recipe! Looks sooo good...am sooo hungry...
:-D
UUUUUUUM.... Recipe? Riiiiight.
Let's see. While I was washing, shelling and deveining the shrimp, and patting both the shrimp and scallops dry with paper towels I had minced garlic, crushed red pepper and lemon zest sauteing over REALLY low heat.
Then I added the scallops - let those go for a few min because they were so thick, then added the shrimp - all over higher heat. (This of course, over-toasted the garlic a little - not a biggie).
I pulled the shrimp out temporarily so they didn't over cook. Once the scallops looked done I threw the shrimp back in, squeezes the two lemon halves over the whole mix, then dumped in a slosh or two of the white wine left over from the Halloween party. Looked a little thin so I added a sprinkle of flour to give it some substance. Then watered it a tad to neutralize the REALLY strong flavor of too much lemon juice and wine (and to thin the flour-thickened mixture a tad).
Once it seemed just right I added a little more red pepper and the parsley I chopped, then threw in the just-drained linguini pasta and stirred it all together.
But sorry, no recipe, no measurements...just winged it!
Nuts - need to get yogurt, lemon juice, indian spices and chicken together before bed for tomorrow nites dinner!
Yum, yum, - seafood - my favourite! I prefer seafood over beef, chicken, veal, and pork :)
