Panettone bread pudding

Brett received this panettone in a large tin from a coworker at Christmas. Totally not something Brett would eat, and I was curious but just hadn't found a real use for it. It was 2 lbs of bread - I can't eat all that! The good news is panettone seem to be known for their storing capabilities!



I finally settled on a recipe to use it all up - a nice panettone bread pudding recipe that only called for one 1lb of the bread, but with many reader comments saying the original recipe was too eggy - they suggested beefing up the bread, or reducing the eggs. Hmmm....perfect! I had 2 lbs of bread!

Here's what I whipped up!



This stuff was SOOOO popular at work the next day! The bread was studded with some sort of nuts (chestnuts I believe) and maybe figs? And I don't know what aromatics were in it, but OMG was it goooood! I didn't have amaretto for the sauce, so tried kahlua. The coffee lovers at work really enjoyed it - I did not. Maybe I should've tried brandy? Anyhow - in the picture above it looks like it has chopped up Reese's cups in it with all those ridges, but that's just from the imprint of the paper wrapped the bread was baked in.

I tell ya - now I'll keep an eye out for good deals on panettone in odd places, like TJ Maxx or where ever. Might not be something I'd eat by itself, but I've finally made the perfect bread pudding!

I'll be doing the same! I wonder if this is the kind of thing we should stock up on if we only see them around the holidays, and then treat ourselves to bread puddings for the next few months!? ;-)
